- ¼ cup thick caramel sauce
- 1 cup finely chopped peanuts, divided
- ¾ cup mini chocolate chips, divided

- Combine Peanut Butter Mixture: In a large bowl, combine the peanut butter, semisweet chocolate chips, and heavy cream. Microwave the mixture on high in 20-30 second intervals, stirring well after each interval until the mixture is smooth and fully combined, which should take about 45-50 seconds in total.
- Add Cream Cheese: Add the softened cream cheese to the peanut butter mixture. Using an electric mixer, beat the ingredients together until the mixture is smooth and well incorporated.
- Mix in Sugar and Caramel: Add the powdered icing sugar and the thick caramel sauce to the bowl. Continue beating the mixture until all the ingredients are evenly combined and the mixture is smooth.
- Incorporate Peanuts and Chocolate Chips: Stir in ½ cup of the chopped peanuts and ¼ cup of the mini chocolate chips into the mixture. Wrap the mixture tightly with plastic wrap, then shape it into a ball as best as possible. Refrigerate the cheese ball for at least 3 hours to set. For make-ahead convenience, wrap well and freeze the ball for up to 3 months at this stage.
- Coat the Cheese Ball: Combine the remaining ½ cup chopped peanuts and ½ cup mini chocolate chips on a rimmed plate. Remove the cheese ball from the refrigerator and roll it in the peanut and chocolate chip mixture, pressing down gently to coat the surface evenly and form a circular shape.
- Serve: Place the coated cheese ball on a large serving plate. Serve chilled alongside apple slices and graham crackers for dipping and spreading.
