Description

Snowball Brownies are a festive and delicious twist on classic brownies, featuring a rich and fudgy base topped with a creamy marshmallow and frosting mixture, finished with brightly colored shredded coconut for a snowy effect. Perfect for holiday gatherings or anytime you want a fun and indulgent treat.

Ingredients

Brownie Base

  • 18 ounces box of brownie mix (follow package instructions)
  • 1/3 cup vegetable oil
  • 1/3 cup water

Topping

  • 7 ounces marshmallow fluff
  • 16 ounces canned vanilla frosting
  • 7 ounces shredded coconut
  • Pink food coloring (2-3 drops or as needed)

Instructions

  1. Prepare baking dish: Line a 9×13 inch baking dish with parchment paper to prevent sticking and ensure easy removal of the brownies.
  2. Mix brownie batter: Follow the instructions on the back of the brownie mix box, combining the brownie mix with 1/3 cup vegetable oil and 1/3 cup water until smooth.
  3. Bake brownies: Pour the prepared batter into the lined baking dish and bake according to the time and temperature specified on the box instructions, usually about 20-30 minutes.
  4. Cool brownies: Allow the brownies to cool completely in the pan, which typically takes about one hour, to ensure the topping spreads smoothly.
  5. Mix topping: In a medium bowl, combine 7 ounces of marshmallow fluff with 16 ounces of canned vanilla frosting and stir until the mixture is fully blended and smooth.
  6. Spread topping: Evenly spread the marshmallow and frosting mixture over the completely cooled brownies using a spatula or knife.
  7. Color the coconut: In a separate medium bowl, add the shredded coconut and 2-3 drops of pink food coloring. Stir well with a spoon until the coconut is thoroughly coated and reaches the desired color. Add more drops if needed for a brighter hue.
  8. Top the brownies: Sprinkle the dyed coconut evenly over the frosting layer on the brownies and gently press it down to help it stick. Add more coconut on top if you want a thicker snowball appearance.
  9. Slice and serve: Once topped, slice the brownies into 15 pieces and serve immediately or store for later enjoyment.

Notes

  • Ensure brownies are completely cooled before applying the topping to avoid melting the frosting and marshmallow mixture.
  • You can experiment with different food coloring shades for the coconut to match different themes or holidays.
  • For a nutty twist, sprinkle chopped nuts over the topping before adding the coconut.
  • Store brownies in an airtight container at room temperature for up to 3 days.
