Ingredients
Brownie Bottom Layer
- 1 cup flour
- 2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon instant espresso powder (optional)
- 1/4 cup unsweetened cocoa powder
- 2/3 cup milk
- 2/3 cup granulated sugar
- 4 tablespoons unsalted butter, melted
- 1 1/2 teaspoons vanilla extract
Top Layers
- 1/4 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 cup hot tap water
For Serving
- Vanilla ice cream
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and prepare an 8 or 9-inch square brownie pan for baking.
- Make Brownie Layer: In a small bowl, whisk together the flour, baking powder, salt, instant espresso powder (if using), and cocoa powder. Add the milk, granulated sugar, melted butter, and vanilla extract to form a very thick batter. Spread this batter evenly in the prepared baking dish.
- Prepare Top Layer: In a separate bowl, combine the cocoa powder, granulated sugar, and light brown sugar. Sprinkle this mixture evenly over the brownie batter in the pan.
- Add Hot Water: Carefully pour the hot tap water over the top layer evenly—do not stir or mix the layers.
- Bake the Cobbler: Place the baking pan on a small sheet pan to catch any overflow and bake in the oven for 35 minutes until the top is set and the brownie layer is cooked through.
- Rest and Serve: Let the cobbler stand for 15 minutes after baking to thicken slightly. Serve warm topped with vanilla ice cream for a classic Southern dessert experience.
Notes
- The instant espresso powder is optional but enhances the chocolate flavor.
- Using hot tap water helps create the self-saucing effect characteristic of this cobbler.
- Make sure not to stir after pouring the water to allow the layers to develop distinctly during baking.
- Serve immediately after resting for best texture and flavor.
- Use a sheet pan under the baking dish to prevent spills in your oven.
