Ingredients

Chicken and Seasoning

  • 1 cup corn (frozen or canned)
  • 1 onion, coarsely chopped (about 1 cup)

Sauce

  • 1 (16-oz) jar salsa

Instructions

  1. Prep chicken: Spread one-third of the salsa jar evenly over the bottom of the crockpot. Place the chicken breasts on top and sprinkle the taco seasoning evenly over the chicken.
  2. Add vegetables and salsa: Layer the black beans, corn, and chopped onion evenly over the chicken. Pour the remaining salsa evenly on top of the vegetable mixture.
  3. Slow cook: Cover the crockpot and cook on LOW for 8 hours or on HIGH for 4 hours until the chicken is fully cooked and tender.
