Instructions
- Heat the oil and test kernels: In a large heavy-bottomed stockpot or dutch oven, add the oil and three popcorn kernels. Heat over high heat and cover the pan. These test kernels indicate when the oil has reached the right temperature once they pop.
- Prepare remaining kernels and butter: Measure out the remaining 1/2 cup popcorn kernels. Melt the unsalted butter either in a microwave-safe bowl or on the stovetop, heating in 30-second intervals if microwaving to avoid overheating.
- Mix the cheese seasoning: In a small bowl, combine the freshly grated parmesan cheese, garlic powder, and red pepper flakes, stirring thoroughly to blend the flavors.
- Pop the kernels: Once the test kernels pop, immediately add the remaining 1/2 cup of popcorn kernels to the pan. Cover and remove from the heat, gently swirling the pan side to side for 20 seconds. Then return the pan to the heat to begin popping.
- Vent steam during popping: When the popping reaches about halfway—approximately when the pot is half full or 30 seconds to 1 minute after popping starts—slightly crack the lid to release excess steam. This helps keep the popcorn crisp.
- Finish popping and transfer: Shake the pan gently if necessary to allow unpopped kernels to reach the bottom. When popping slows or stops, remove from heat and pour popcorn into a serving bowl immediately.
