Delight in the refreshing and tangy Strawberry Ice Pops infused with the rich flavor of wild berry balsamic vinegar. These homemade frozen treats combine fresh strawberries, a touch of sugar, subtle black pepper, and balsamic vinegar to create a perfectly balanced sweet and slightly savory flavor that’s ideal for a hot summer day or a light dessert.
Ingredients
Strawberry Ice Pops Ingredients
- 4 cups fresh strawberries, washed and hulled (about 1 ½ pounds)
- 2 tablespoons granulated sugar
- 2 tablespoons balsamic vinegar (wild berry balsamic preferred)
- 1/8 teaspoon fresh ground black pepper
Instructions
- Macerate Strawberries: Place the washed and hulled strawberries in a medium bowl. Sprinkle evenly with granulated sugar and toss gently to coat. Let the mixture sit for 30 to 60 minutes to allow the strawberries to release their natural juices.
- Blend Mixture: Transfer the macerated strawberries along with their juices to a blender. Add the balsamic vinegar and fresh ground black pepper. Pulse the mixture until you achieve a slightly chunky puree, ensuring a nice texture for the ice pops.
- Fill Molds: Carefully pour the strawberry mixture evenly into popsicle molds, leaving about ¼ inch of space from the top to allow for expansion during freezing.
- Insert Sticks: Cover the molds with lids or aluminum foil, then insert popsicle sticks through the covers to hold them in place.
- Freeze: Place the molds in the freezer and freeze for at least 12 hours or until the popsicles are completely solid.
- Serve: To release the ice pops, run the outside of the molds under warm water for about 10 seconds. Gently pull on the sticks to remove the popsicles and serve immediately for a cool and delicious treat.
Notes
- For the best flavor, use fresh, ripe strawberries and high-quality wild berry balsamic vinegar.
- Adjust the sugar amount depending on the sweetness of your strawberries.
- If you don’t have popsicle molds, you can use small paper cups and wooden sticks as an alternative.
- The addition of black pepper adds a subtle spicy note but can be omitted if preferred.
- Ensure the mixture is chilled before pouring into molds if you want finer texture in ice pops.
