  • 4 cups fresh strawberries, washed and hulled (about 1 ½ pounds)
  • 2 tablespoons granulated sugar
  • 2 tablespoons balsamic vinegar (wild berry balsamic preferred)
  • 1/8 teaspoon fresh ground black pepper


Instructions

  1. Macerate Strawberries: Place the washed and hulled strawberries in a medium bowl. Sprinkle evenly with granulated sugar and toss gently to coat. Let the mixture sit for 30 to 60 minutes to allow the strawberries to release their natural juices.
  2. Blend Mixture: Transfer the macerated strawberries along with their juices to a blender. Add the balsamic vinegar and fresh ground black pepper. Pulse the mixture until you achieve a slightly chunky puree, ensuring a nice texture for the ice pops.
  3. Fill Molds: Carefully pour the strawberry mixture evenly into popsicle molds, leaving about ¼ inch of space from the top to allow for expansion during freezing.
  4. Insert Sticks: Cover the molds with lids or aluminum foil, then insert popsicle sticks through the covers to hold them in place.
  5. Freeze: Place the molds in the freezer and freeze for at least 12 hours or until the popsicles are completely solid.
  6. Serve: To release the ice pops, run the outside of the molds under warm water for about 10 seconds. Gently pull on the sticks to remove the popsicles and serve immediately for a cool and delicious treat.
