Description

These Strawberry Banana Yogurt Clusters are a delightful and healthy frozen treat combining fresh fruit, creamy Greek yogurt, and a rich dark chocolate coating topped with crunchy roasted peanuts. Perfect for a refreshing snack or a guilt-free dessert, these clusters offer a blend of sweet and tangy flavors with a satisfying crunch.

Ingredients

Fruit and Yogurt Mixture

  • 2 cups strawberries, chopped
  • 1 large banana, chopped
  • ½ cup plain full fat Greek yogurt
  • 1 tablespoon honey

Chocolate Coating

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Toppings

  • chopped roasted and salted peanuts, for sprinkling

Instructions

  1. Mix: In a large bowl, gently stir together the chopped strawberries, chopped banana, plain full fat Greek yogurt, and honey until all ingredients are well combined to form a smooth fruit and yogurt mixture.
  2. Freeze: Scoop the mixture onto a parchment-lined baking sheet into small clusters. Place the baking sheet in the freezer and let the clusters freeze for about 1 hour, allowing them to firm up.
  3. Melt Chocolate: While the clusters are freezing, melt the dark chocolate chips together with the coconut oil in 30-second increments in the microwave, stirring between each interval, or melt in a double boiler until smooth and glossy.
  4. Coat: Remove the frozen yogurt clusters from the freezer. Instead of dipping, pour or drizzle the melted chocolate over each cluster to coat them evenly. This method prevents the chocolate from hardening too quickly and keeps the process manageable.
  5. Top: Immediately sprinkle the chocolate-coated clusters with chopped roasted and salted peanuts before the chocolate sets to add a crunchy texture and complementary flavor.
  6. Serve: Return the coated clusters to the freezer until the chocolate fully hardens and the clusters are completely frozen. Once set, enjoy these refreshing and indulgent treats straight from the freezer.

Notes

  • Use full-fat Greek yogurt for creaminess and better texture.
  • Do not dip frozen clusters into chocolate to avoid quick hardening; drizzle or pour chocolate coating instead.
  • Store yogurt clusters in an airtight container in the freezer for up to one week.
  • For a nut-free version, omit the peanuts or substitute with seeds like pumpkin or sunflower.
  • Use dark chocolate with at least 70% cocoa for richer flavor and lower sugar content.
