Ingredients
Strawberry Topping
- 1 tbsp cornstarch
- ¼ cup warm water
- 8 oz strawberries, cut into quarters
- 4 tbsp granulated sugar
Cheesecake Dip Base
- 1 8oz brick cream cheese, softened
- 8 oz container mascarpone cheese
- ½ cup powdered sugar
- 1 tbsp lemon juice
Garnish
- Lemon zest
Instructions
- Prepare the cornstarch mixture: In a small bowl, mix the cornstarch with warm water until smooth and fully dissolved.
- Cook the strawberry topping: Add the cornstarch mixture to a small saucepan along with the quartered strawberries and granulated sugar. Stir well and bring to a simmer over medium heat. Simmer for 5 minutes, stirring constantly, while gently smashing some of the strawberries to help release their juices. Remove from heat and set aside to cool.
- Make the cheesecake base: Using a stand mixer with a whisk attachment or an electric hand mixer, beat together the softened cream cheese, mascarpone cheese, powdered sugar, and lemon juice until the mixture is smooth, creamy, and evenly combined.
- Assemble the dip: Spread the cheesecake mixture evenly into a shallow serving bowl. Spoon the cooled strawberry topping over the cheesecake layer.
- Garnish and serve: Sprinkle lemon zest on top for a fresh finish. Serve immediately with your choice of cookies or apple slices for dipping.
Notes
- Ensure the cream cheese is softened to room temperature for a smooth dip.
- You can substitute mascarpone with an equal amount of cream cheese if unavailable, but mascarpone adds a richer texture.
- For a more intense lemon flavor, add a teaspoon of lemon zest to the cheesecake mixture in addition to the garnish.
- This dip is best served fresh but can be refrigerated for up to 24 hours. Bring to room temperature before serving for optimal texture.
- Use fresh, ripe strawberries for the best flavor, but frozen strawberries can be used if fresh are not available; just thaw before use.
