Ingredients

Strawberry Topping

  • 8 oz strawberries, cut into quarters
  • 4 tbsp granulated sugar

Cheesecake Dip Base

  • 1 8oz brick cream cheese, softened
  • 8 oz container mascarpone cheese
  • ½ cup powdered sugar
  • 1 tbsp lemon juice

Garnish

  • Lemon zest


Instructions

  1. Prepare the cornstarch mixture: In a small bowl, mix the cornstarch with warm water until smooth and fully dissolved.
  2. Cook the strawberry topping: Add the cornstarch mixture to a small saucepan along with the quartered strawberries and granulated sugar. Stir well and bring to a simmer over medium heat. Simmer for 5 minutes, stirring constantly, while gently smashing some of the strawberries to help release their juices. Remove from heat and set aside to cool.
  3. Make the cheesecake base: Using a stand mixer with a whisk attachment or an electric hand mixer, beat together the softened cream cheese, mascarpone cheese, powdered sugar, and lemon juice until the mixture is smooth, creamy, and evenly combined.
  4. Assemble the dip: Spread the cheesecake mixture evenly into a shallow serving bowl. Spoon the cooled strawberry topping over the cheesecake layer.
