Perfectly balanced with a hint of cinnamon and vanilla, this crisp is easy to prepare and serves as a warm, comforting treat for any occasion.
Ingredients
Filling
- 2 lbs strawberries (quartered, about 5-6 cups)
- ¼ cup honey (or maple syrup)
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 3 tablespoons cornstarch
Crumble Topping
- 1 cup gluten-free rolled oats
- ½ cup oat flour (or substitute with 1:1 gluten-free all-purpose flour)
- ⅓ cup light brown sugar
- ¼ teaspoon ground cinnamon
- 6 tablespoons unsalted butter (melted)
- ⅛ teaspoon fine sea salt
Instructions
- Prep Equipment: Preheat your oven to 350ºF (177ºC) and grease a 9-inch pie dish with butter or oil to prevent sticking.
- Sweeten Strawberries: Spread the quartered strawberries evenly in the bottom of the prepared baking dish. Drizzle the honey, lemon juice, and vanilla extract over the strawberries, then stir gently to combine. Sprinkle the cornstarch evenly over the mixture and stir again until well incorporated. Redistribute the strawberries evenly in the dish.
- Make Crumble: In a medium bowl, combine the gluten-free rolled oats, oat flour, light brown sugar, ground cinnamon, and fine sea salt. Pour the melted butter into the oat mixture and stir well until everything is evenly combined. Spread this oatmeal mixture evenly over the strawberry layer in the baking dish.
- Bake: Place the dish in the preheated oven and bake for 25 to 30 minutes or until the oatmeal topping turns golden brown and crisp, and the strawberries are bubbly around the edges. Remove from the oven and allow the crisp to cool for about 20 minutes before serving with your preferred toppings.
Notes
- You can substitute maple syrup for honey for a vegan version.
- Allowing the crisp to cool slightly helps the filling set and improves flavor.
- Serve warm with vanilla ice cream or whipped cream for an extra special dessert.
- Using gluten-free oats and flour makes this dessert safe for gluten-sensitive individuals.
