Description

This refreshing Strawberry Jello Salad is a delightful layered dessert featuring a vibrant mix of gelatin, frozen strawberries, crushed pineapple, bananas, pecans, and creamy sour cream. Perfect for potlucks or family gatherings, it offers a balanced combination of fruity sweetness and creamy texture, chilled to perfection for easy slicing and serving.

Ingredients

Gelatin Base

  • 6 oz. strawberry Jello
  • 1 cup boiling water

Fruits and Nuts

  • 20 oz. frozen sliced strawberries
  • 20 oz. crushed pineapple, well drained (do not use fresh pineapple)
  • 3 medium bananas, sliced
  • 1/2 cup chopped pecans

Cream Layer

  • 16 oz. sour cream

Instructions

  1. Dissolve the Gelatin: In a large mixing bowl, whisk together the strawberry gelatin and boiling water until the gelatin is completely dissolved, ensuring a smooth base for the salad.
  2. Combine Fruits and Nuts: Add the well-drained crushed pineapple, sliced bananas, frozen sliced strawberries, and chopped pecans into the gelatin mixture. Stir thoroughly to distribute all ingredients evenly.
  3. Prepare First Layer: Pour half of the gelatin-fruit mixture into a 9×13 inch baking dish. Place it in the refrigerator to set for 20-30 minutes while leaving the remaining gelatin mixture aside at room temperature without chilling.
  4. Add Sour Cream Layer: Once the first layer is firm, spread the sour cream evenly over it, making sure to reach the edges of the dish for a consistent layer.
  5. Top with Remaining Gelatin Mix: Pour the remaining gelatin-fruit mixture over the sour cream layer and carefully smooth it toward the edges. This completes the layered effect of the salad.
  6. Chill Thoroughly: Refrigerate the assembled salad for at least 2 hours, preferably overnight. The longer chilling time helps the salad set properly and makes for cleaner slicing when serving.

Notes

  • Ensure the crushed pineapple is well drained to avoid excess liquid which can prevent the gelatin from setting properly.
  • The bananas add freshness but may brown over time; consume within 24 hours for best appearance and flavor.
  • Use a glass or plastic 9×13 inch dish to better observe the beautiful layers.
  • The salad can be prepared a day ahead, which improves flavor melding and firmness.
  • For a nut-free option, omit pecans or substitute with toasted coconut flakes.
