Instructions

  1. Macreate the strawberries: Place the hulled and halved fresh strawberries in a large bowl and drizzle honey over them. Stir gently to coat the berries evenly. Let them sit for 5 to 10 minutes until the strawberries look shiny and release a pool of juice at the bottom.
  2. Blend the strawberries: Transfer the macerated strawberries along with their juices into a blender. Blend for about 30 seconds until the puree becomes smooth and bright pink, with no visible chunks remaining.
  3. Mix the base: Pour the smooth strawberry puree back into a bowl. Add the plain yogurt and fresh lime juice. Stir thoroughly for about 1 minute until the mixture is evenly pale pink with no streaks.
  4. Fill the molds: Evenly pour the strawberry yogurt mixture into 10 popsicle molds, stopping about 1/4 inch from the top to allow room for expansion during freezing, ensuring lids fit snugly.
  5. Insert the sticks: Cover the molds with lids or aluminum foil, then push a popsicle stick down through the center of each mold until it stands upright on its own.
