Ingredients

Fruit and Toppings

  • 1 cup strawberries (thinly sliced, with some reserved for garnish)
  • ½ medium banana (sliced)

Cream Cheese Mixture

  • 4 oz cream cheese (softened)
  • ½ cup powdered sugar
  • ½ tsp vanilla paste
  • 1 ½ tbsp kefir
  • 2 tsp Nutella (or more, divided)

French Toast and Coating

  • 6 slices gluten free bread
  • 1 tsp cinnamon (or more if preferred)
  • 1 egg
  • ½ cup milk
  • 1 tbsp brown muscovado sugar


Instructions

  1. Prepare the Strawberries: Slice the strawberries thinly, reserving a few for garnish. Place them in a small bowl and stir with 1 tablespoon of brown muscovado sugar to coat. Set aside to macerate while you prepare the other components.
  2. Make the Cream Cheese Mixture: In a large mixing bowl or a stand mixer fitted with a paddle attachment, whisk together the softened cream cheese, powdered sugar, vanilla paste, and kefir until smooth and creamy. Chill this mixture in the refrigerator until assembly.
  3. Prepare the Egg Mixture: In a large bowl suitable for dipping, whisk together the egg, milk, and cinnamon until well combined.
  4. Assemble the French Toast Sandwiches: On a flat surface or large plate, spread about two-thirds of the cream cheese mixture evenly across each slice of bread that will form the sandwich. Add Nutella to the remaining cream cheese mixture, stir to combine, and spread this on separate bread slices. Layer the macerated strawberries and banana slices on top of the cream cheese-spread slices.
  5. Combine and Dip: Place the Nutella and cream cheese-spread slices on top of the fruit-layered slices to form sandwiches. Carefully dip each sandwich into the egg mixture, ensuring both sides are coated.
