Ingredients
Dry Ingredients
- 3/4 cup granulated sugar
- 1 teaspoon ground cinnamon (divided)
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/8 teaspoon ground nutmeg
Wet Ingredients
- 2 large eggs (at room temperature)
- 1 teaspoon vanilla extract
- 3/4 cup milk
- 1/2 cup unsalted butter (melted and cooled)
Fruit
- 3-5 ripe plums (pitted and cut into small chunks)
Topping
- 2 tablespoons granulated sugar
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready when your batter is prepared.
- Prepare Muffin Tin: Spray or line 10 muffin cups with paper liners. Fill the remaining two cups with water to maintain moisture during baking.
- Mix Dry Ingredients: In a large bowl, whisk together 3/4 cup sugar, 1/2 teaspoon cinnamon, all-purpose flour, baking powder, salt, and nutmeg. Set this mixture aside.
- Combine Wet Ingredients: In a separate bowl, whisk together the eggs, vanilla extract, milk, and cooled melted butter until smooth.
- Combine Wet and Dry: Gently fold the wet mixture into the dry ingredients using a rubber spatula, being careful not to overmix to keep muffins tender.
- Fill Muffin Cups – First Layer: Evenly divide half of the batter among the prepared muffin cups, filling each about halfway.
- Add Plum Layer: Place a generous layer of the chopped plum pieces evenly over the batter in each muffin cup.
- Fill Muffin Cups – Second Layer: Spoon the remaining batter evenly over the plum layer, completely covering the fruit.
- Add Sugar-Cinnamon Topping: In a small bowl, combine the remaining 2 tablespoons sugar and 1/2 teaspoon cinnamon, then sprinkle this mixture evenly over the top of each muffin.
- Bake: Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool: Allow muffins to cool in the tin for 5 to 10 minutes before removing to a wire rack to cool completely.
Notes
- Room temperature eggs help the batter mix more evenly and produce fluffier muffins.
- Adding water to extra muffin cups during baking helps keep the muffins moist by creating steam in the oven.
- Do not overmix the batter to avoid dense muffins; stir just until combined.
- Use ripe but firm plums for the best flavor and texture inside the muffins.
- These muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 1 month.
