Instructions
- Roast the Sweet Potatoes: Preheat your oven to 400°F (200°C). Pierce the sweet potatoes several times with a fork and place them on a baking sheet. Roast in the oven for 45 to 50 minutes until tender. Remove and let them cool. Then reduce the oven temperature to 350°F (175°C) for baking the casserole.
- Prepare the Baking Dish: Lightly grease an 8×8 or 9×9-inch baking pan to prevent sticking and set aside.
- Mix Wet Ingredients: In a large mixing bowl, whisk together the eggs, blended cottage cheese, milk, maple syrup, and vanilla extract until the mixture is smooth and fully combined.
- Prepare Sweet Potatoes: Once cooled, peel the sweet potatoes and mash them thoroughly with a fork. Stir this mashed sweet potato into the wet ingredient mixture until evenly incorporated.
