Ingredients

Sweet Potato and Wet Ingredients

  • 2 medium sweet potatoes
  • 4 large eggs

  • 1 tsp vanilla extract

Instructions

  1. Roast the Sweet Potatoes: Preheat your oven to 400°F (200°C). Pierce the sweet potatoes several times with a fork and place them on a baking sheet. Roast in the oven for 45 to 50 minutes until tender. Remove and let them cool. Then reduce the oven temperature to 350°F (175°C) for baking the casserole.
  2. Prepare the Baking Dish: Lightly grease an 8×8 or 9×9-inch baking pan to prevent sticking and set aside.
  3. Mix Wet Ingredients: In a large mixing bowl, whisk together the eggs, blended cottage cheese, milk, maple syrup, and vanilla extract until the mixture is smooth and fully combined.
  4. Prepare Sweet Potatoes: Once cooled, peel the sweet potatoes and mash them thoroughly with a fork. Stir this mashed sweet potato into the wet ingredient mixture until evenly incorporated.
  5. Add Dry Ingredients: Sprinkle in the cinnamon, sea salt, rolled oats, and baking powder into the bowl. Fold all ingredients together gently, then fold in the chocolate chips evenly throughout the batter.
  6. Assemble and Bake: Pour the mixture into the prepared baking pan, smoothing the top with a spatula. Bake in the oven at 350°F (175°C) for 42 to 50 minutes, or until the top is golden brown, the center is set, and a toothpick inserted near the center comes out mostly clean.
