Description

This comforting Tater Tot Casserole combines ground beef, creamy mushroom soup, corn, and cheddar cheese, all slow-cooked to perfection and topped with crispy tater tots. A hearty and easy-to-make meal that’s perfect for a family dinner or potluck.

Ingredients

Main Ingredients

  • 1 pound lean ground beef
  • 12 ounces corn (frozen or canned)
  • 10.5 ounces cream of mushroom soup (one can)
  • 1 small onion (diced)
  • ½ cup milk
  • ¼ cup sour cream
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 20 ounces frozen tater tots
  • 1 ½ cups sharp cheddar cheese (shredded)

Instructions

  1. Brown the Ground Beef: In a medium skillet, cook the ground beef over medium-high heat, breaking it into small pieces until fully browned and no longer pink.
  2. Combine Ingredients in Slow Cooker: Transfer the cooked ground beef to the slow cooker. Add corn, cream of mushroom soup, diced onion, milk, sour cream, Worcestershire sauce, garlic powder, salt, and pepper. Stir to combine all ingredients evenly.
  3. Add Tater Tots: Spread a single layer of frozen tater tots evenly over the surface of the meat mixture in the slow cooker.
  4. Cook Slowly: Cover the slow cooker with its lid and cook on low heat for 4 hours, allowing flavors to meld and tater tots to soften.
  5. Add Cheese and Melt: About 10 minutes before serving, sprinkle shredded sharp cheddar cheese evenly over the top. Cover again and cook until the cheese melts, then serve hot.

Notes

  • For a crispier tater tot topping, you can broil the casserole for a few minutes after slow cooking, but be careful not to burn.
  • You can substitute cream of mushroom soup with cream of chicken or celery for a different flavor.
  • If you prefer, use fresh corn cut from the cob in place of canned or frozen.
  • Adjust seasoning with salt and pepper according to taste.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
