Ingredients
Vegetables
- 1 small onion, diced
- 2 carrots, diced
- 6 mushrooms, diced
- 1 stalk of celery, diced
- 2 cloves garlic, minced
- 1/2 cup frozen peas
Meat and Seasonings
- 1 lb ground beef
- 1 tsp Italian seasoning
- 3 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- salt & pepper, to taste
Other Ingredients
- olive oil (for cooking)
- 2 tbsp flour
- 1.5 cups beef broth
- 16 oz frozen tater tots
Instructions
- Prepare the Vegetables: Preheat your oven to 375°F. Heat a drizzle of olive oil in a pan over medium-high heat. Add the diced onion, carrots, mushrooms, celery, and minced garlic to the pan, seasoning with salt and pepper. Sauté until the vegetables soften, about 5 minutes.
- Cook the Ground Beef: Add the ground beef to the pan with the softened vegetables. Cook for 4-5 minutes until the beef is browned, breaking it up into small pieces with a spoon or meat chopper.
- Create the Filling Sauce: Stir in the Italian seasoning, tomato paste, and flour, cooking the mixture for about 1 minute. Gradually pour in the beef broth and Worcestershire sauce, stirring to dissolve the tomato paste and flour completely. Cook for an additional 1-2 minutes until the sauce thickens slightly. Add frozen peas and cook for another 2-3 minutes. Taste and adjust salt and pepper as needed. Remove from heat.
- Assemble the Shepherd’s Pie: Spread the beef and vegetable mixture evenly in your baking dish. Arrange the frozen tater tots in a single layer over the top of the filling.
- Bake: Place the assembled dish in the preheated oven and bake for 40-45 minutes, or until the tater tots are golden brown and crispy.
- Serve: Remove from the oven and allow to cool slightly before serving the shepherd’s pie hot. Enjoy the delicious combination of tender filling and crispy top!
Notes
- You can substitute the carrots with other sturdy vegetables like parsnips or sweet potatoes if desired.
- Using fresh vegetables instead of frozen peas is also an option; just adjust cooking times accordingly.
- For a richer flavor, consider adding a splash of red wine to the beef broth when making the sauce.
- Feel free to add shredded cheese on top of the tater tots for extra indulgence before baking.
- To make this dish dairy-free, ensure the tater tots used do not contain any milk products.
