Description

This Tater Tot Taco Casserole is a delicious and hearty dish combining seasoned ground beef, beans, corn, and cheddar cheese, all topped with crispy golden tater tots. Baked to perfection and garnished with classic taco toppings, it’s a perfect family-friendly meal ready in just 30 minutes.

Ingredients

Main Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 (15 oz) can petite diced fire roasted tomatoes
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1.5 cups shredded cheddar cheese
  • 4-6 cups frozen tater tots

Toppings

  • Salsa (to taste)
  • Guacamole (to taste)
  • Sour cream (to taste)
  • Lettuce (shredded, to taste)

Instructions

  1. Preheat and Brown Beef: Preheat your oven to 350°F. In an oven-safe skillet over medium heat, cook the ground beef until fully browned, breaking it up as it cooks.
  2. Add Seasoning and Veggies: Pour in the taco seasoning, canned fire roasted tomatoes, rinsed black beans, and corn kernels. Stir everything together well and allow it to simmer for 5 minutes to blend the flavors.
  3. Add Cheese and Arrange Tater Tots: Remove the skillet from heat. Evenly sprinkle the shredded cheddar cheese over the beef mixture, then arrange the frozen tater tots on top in a single layer.
  4. Bake the Casserole: Place the skillet in the preheated oven and bake at 350°F for 20 minutes, or until the cheese is melted and tater tots are golden and cooked through.
  5. Add Toppings and Serve: Remove from oven and top with your favorite taco toppings such as salsa, guacamole, sour cream, and shredded lettuce. Serve warm.

Notes

  • Use an oven-safe skillet for easy transfer from stovetop to oven.
  • You can substitute shredded Monterey Jack cheese or a Mexican blend for cheddar.
  • For extra spice, add chopped jalapeños or hot sauce before baking.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
