Ingredients
Truffle Butter
- 1 stick butter, at room temperature
- 1 garlic clove, finely grated or minced
- 2 – 3 teaspoons truffle oil
- 3/4 teaspoon finely chopped thyme
- 3/4 teaspoon finely chopped rosemary
- 1 teaspoon lemon juice
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper

- 6 Foster Farms Chicken Thighs (about 3 pounds)
- Additional kosher salt and black pepper for seasoning
Instructions
- Preheat Oven: Preheat your oven to 425°F to prepare for finishing the chicken thighs after searing.
- Make Truffle Butter: In a medium bowl, combine the room temperature butter with minced garlic, truffle oil, finely chopped thyme and rosemary, lemon juice, salt, and pepper. Mash and stir until all ingredients are evenly combined. Taste and adjust seasoning with additional salt, pepper, or truffle oil if desired.
- Apply Truffle Butter: Using your fingers, gently lift the skin of each chicken thigh and evenly spread about a heaping teaspoon of the truffle butter underneath. Reserve any leftover butter. Then season both sides of each thigh with salt and pepper.
- Sear Chicken Skins: Warm a large cast-iron skillet over medium-high heat. Place the chicken thighs skin-side down and cook until the skin is crispy and golden brown, about 5 to 10 minutes. Be cautious as the chicken may pop and splatter during this step; using an outdoor burner or splatter screen is recommended to keep the kitchen clean.
- Oven Roast: Flip the chicken thighs in the skillet and immediately transfer the skillet to the preheated oven. Roast the chicken until the internal temperature reaches 165°F, approximately 10 minutes more.
- Rest and Serve: Remove the skillet from the oven and allow the chicken thighs to rest for 5 minutes before serving to ensure the juices redistribute and the chicken remains moist.
