Ingredients
Meat and Vegetables
- 1 tbsp oil
- 1 yellow onion, diced
- 1 cup fresh chopped tomatoes, plus more for topping
- 16 oz ground turkey
Seasonings
- 1 tsp salt
- 1 tsp garlic powder
- 1/4 tsp pepper
Egg Mixture
- 12 eggs
- 1 cup whole milk
Dairy
- 1/2 cup crumbled goat cheese
Instructions
- Preheat and Prepare Dish: Preheat your oven to 350°F (175°C). Grease a 9×13 inch casserole dish with spray oil to prevent sticking.
- Sauté Onions: Heat 1 tablespoon oil in a frying pan over medium-low heat. Add the diced yellow onion and sauté until soft and fragrant, about 4 minutes.
- Cook Turkey: Increase heat to medium and add the ground turkey to the pan. Break it up into small crumbles and cook until browned, about 6 minutes.
- Season Meat Mixture: Add 1 teaspoon salt, 1 teaspoon garlic powder, and 1/4 teaspoon pepper to the turkey and onions. Sauté together for another minute to combine flavors.
- Prepare Egg Mixture: While the turkey cooks, whisk together 12 eggs and 1 cup whole milk in a bowl until smooth and blended.
- Add Tomatoes to Meat: Stir in the chopped tomatoes to the turkey and onions in the pan. Cook for 2 more minutes to incorporate the flavors, then remove from heat.
- Combine in Casserole Dish: Pour the turkey and tomato mixture into the prepared casserole dish. Then pour the egg and milk mixture over it. Stir gently to combine everything evenly.
- Add Goat Cheese and Optional Topping: Sprinkle 1/2 cup crumbled goat cheese over the casserole and gently fold it in. Optionally, add thinly sliced tomatoes on top for added freshness and presentation.
- Bake the Casserole: Place the dish in the preheated oven and bake at 350°F for 45 minutes until the eggs are set and the top is slightly golden.
- Cool and Serve: Remove from the oven and let the casserole cool slightly before slicing into squares to serve.
Notes
- You can substitute ground turkey with ground chicken or turkey sausage if preferred.
- If you prefer a dairy-free version, try using a milk alternative and omit the goat cheese or use vegan cheese.
- Fresh tomatoes are best for this recipe, but canned diced tomatoes (drained) can be used in a pinch.
- Adjust seasoning to taste, adding herbs like thyme or oregano for extra flavor.
- Letting the casserole cool slightly before cutting helps it hold its shape better.
