Description

This Turkey Sausage, Tomato, and Goat Cheese Breakfast Casserole is a savory and satisfying morning dish perfect for family breakfasts or brunch gatherings. Ground turkey cooked with onions and tomatoes mixed with fluffy eggs and creamy goat cheese creates a flavorful and protein-rich casserole that’s both comforting and nutritious.

Ingredients

Meat and Vegetables

  • 1 tbsp oil
  • 1 yellow onion, diced
  • 1 cup fresh chopped tomatoes, plus more for topping
  • 16 oz ground turkey

Seasonings

  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/4 tsp pepper

Egg Mixture

  • 12 eggs
  • 1 cup whole milk

Dairy

  • 1/2 cup crumbled goat cheese

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350°F (175°C). Grease a 9×13 inch casserole dish with spray oil to prevent sticking.
  2. Sauté Onions: Heat 1 tablespoon oil in a frying pan over medium-low heat. Add the diced yellow onion and sauté until soft and fragrant, about 4 minutes.
  3. Cook Turkey: Increase heat to medium and add the ground turkey to the pan. Break it up into small crumbles and cook until browned, about 6 minutes.
  4. Season Meat Mixture: Add 1 teaspoon salt, 1 teaspoon garlic powder, and 1/4 teaspoon pepper to the turkey and onions. Sauté together for another minute to combine flavors.
  5. Prepare Egg Mixture: While the turkey cooks, whisk together 12 eggs and 1 cup whole milk in a bowl until smooth and blended.
  6. Add Tomatoes to Meat: Stir in the chopped tomatoes to the turkey and onions in the pan. Cook for 2 more minutes to incorporate the flavors, then remove from heat.
  7. Combine in Casserole Dish: Pour the turkey and tomato mixture into the prepared casserole dish. Then pour the egg and milk mixture over it. Stir gently to combine everything evenly.
  8. Add Goat Cheese and Optional Topping: Sprinkle 1/2 cup crumbled goat cheese over the casserole and gently fold it in. Optionally, add thinly sliced tomatoes on top for added freshness and presentation.
  9. Bake the Casserole: Place the dish in the preheated oven and bake at 350°F for 45 minutes until the eggs are set and the top is slightly golden.
  10. Cool and Serve: Remove from the oven and let the casserole cool slightly before slicing into squares to serve.

Notes

  • You can substitute ground turkey with ground chicken or turkey sausage if preferred.
  • If you prefer a dairy-free version, try using a milk alternative and omit the goat cheese or use vegan cheese.
  • Fresh tomatoes are best for this recipe, but canned diced tomatoes (drained) can be used in a pinch.
  • Adjust seasoning to taste, adding herbs like thyme or oregano for extra flavor.
  • Letting the casserole cool slightly before cutting helps it hold its shape better.
