Ingredients
Brownie Batter
- 1 cup (226 g) unsalted butter
- 1 cup (170 g) semi-sweet chocolate chips (or mix of milk and dark chocolate chips)
- 2 cups (400 g) granulated sugar
- 4 large eggs
- ¾ cup (60 g) Dutch processed cocoa powder
- 2 teaspoons (10 ml) vanilla extract
- ¼ teaspoon salt
- ½ teaspoon baking powder
- 1 cup (120 g) all purpose flour
- 1 cup (93 g) chopped pecans
Topping
- ½ cup caramel sauce
- ½ cup (85 g) chocolate chips
- Additional chopped pecans for topping (amount as desired)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (177°C). Line a 9 x 13 inch metal baking pan with parchment paper along the long sides and bottom, allowing easy removal of the brownies after baking.
- Melt Butter and Chocolate: In a microwave-safe mixing bowl, combine the unsalted butter and semi-sweet chocolate chips. Microwave in 30-second intervals, stirring after each, until fully melted and smooth. Stir in the granulated sugar lightly and microwave for an additional 30 seconds. Mix thoroughly until the sugar is fully incorporated into the chocolate and butter mixture.
- Mix Wet Ingredients and Cocoa: Add the eggs, vanilla extract, Dutch processed cocoa powder, and salt to the melted mixture. Whisk vigorously until the batter is smooth, glossy, and ribbons off the spatula evenly.
- Add Dry Ingredients and Nuts: Whisk in the baking powder followed by the all-purpose flour until just combined. Fold in 1 cup of chopped pecans gently to avoid overmixing.
- Pour Batter and Bake: Pour the brownie batter evenly into the prepared pan and smooth the surface with a flexible spatula. Bake in the preheated oven for 25 to 35 minutes or until a toothpick inserted into the center comes out with a few moist crumbs but not wet batter.
- Cool and Chill: Remove brownies from the oven and allow them to cool in the pan for 1 hour. For extra fudginess, transfer the cooled brownies to the refrigerator and chill for 1 to 2 hours.
- Add Toppings and Serve: Once chilled, lift the brownies from the pan using the parchment paper and place on a cutting board. Drizzle with ½ cup caramel sauce and sprinkle with additional chopped pecans and ½ cup chocolate chips. Slice into 16 servings and enjoy your decadent Turtle Brownies!
Notes
- Use Dutch processed cocoa powder for a richer, smoother chocolate flavor.
- Chilling the brownies after baking enhances their fudginess and makes slicing cleaner.
- You can substitute walnuts for pecans if preferred.
- Ensure not to overbake to keep the brownies moist and fudgy.
- For an extra gooey topping, warm the caramel sauce slightly before drizzling.
