Instructions

  2. Sear Chicken: Heat sun-dried tomato oil in a medium-high pan. Place the chicken thighs skin side down and sear for 2–3 minutes on each side until they develop a golden crust. Remove the chicken and set aside to rest.
  3. Sauté Onion and Tomatoes: In the same pan, add a little more sun-dried tomato oil if necessary. Sauté the diced brown onion for 1–2 minutes until soft and translucent, then add the drained sun-dried tomatoes and cook for an additional 1–2 minutes to release their flavors.
  4. Deglaze and Simmer Sauce: Pour in the chicken stock and thickened cream into the pan, scraping the bottom to loosen any browned bits. Allow the mixture to simmer gently for 3–5 minutes until the sauce thickens slightly.
  5. Cook Chicken in Sauce: Return the seared chicken thighs to the pan, submerging them partially in the sauce. Reduce heat to low and simmer for 5 minutes, turning the chicken halfway through to ensure even cooking and absorption of the sauce. Verify chicken is cooked through.
