Description
These decadent White Chocolate Truffles combine creamy white chocolate ganache with festive coatings like crushed peppermint, shredded coconut, and sprinkles, making them a perfect holiday treat. The silky ganache is chilled, scooped, rolled, and decorated for an elegant bite-sized dessert.
Ingredients
Ganache
- 12 ounces high-quality white chocolate bar, finely chopped
- 4 ounces heavy whipping cream
Coatings and Decorations
- Crushed peppermint candies
- Finely chopped nuts
- Sweetened shredded coconut
- Melted chocolate (for dipping and drizzling)
- Sprinkles or sanding sugar for decoration
Instructions
- Chop the Chocolate: Finely chop 12 ounces of white chocolate into small, uniform pieces and place in a heat-safe bowl to help the chocolate melt evenly.
- Heat the Cream: Warm 4 ounces of heavy whipping cream over medium heat in a small saucepan until it reaches a gentle simmer with tiny bubbles around the edges, avoiding boiling.
- Make the Ganache: Pour the hot cream immediately over the chopped chocolate. Let it sit for 2 minutes undisturbed, then stir slowly with a spatula until smooth and glossy. If needed, melt remaining bits using a double boiler method by placing the bowl over simmering water and stirring until fully melted.
- Chill the Ganache: Cover the bowl with plastic wrap and refrigerate for 2 1/2 to 3 hours until the mixture is firm enough to scoop, as white chocolate ganache remains softer than other ganaches.
- Scoop the Truffles: Use a small cookie scoop or spoon to portion tablespoon-sized mounds onto a parchment-lined baking sheet. Chill for another 20 minutes to help firm them further.
- Roll into Balls: With clean and cool hands, roll each mound into smooth balls. If the truffles soften during rolling, return them to the fridge briefly to firm up before continuing.
- Decorate: Roll the truffle balls in shredded coconut, crushed peppermint, sprinkles, or dip them in melted chocolate for a crisp outer shell. Allow decorated truffles to set before serving.
- Serve or Store: Enjoy chilled for best texture, or store them refrigerated in an airtight container to maintain freshness.
Notes
- Ensure the white chocolate is finely chopped for even melting.
- Do not boil the cream; a gentle simmer is sufficient.
- The ganache requires extended chilling to firm up due to white chocolate’s softness.
- If ganache is too soft to scoop, refrigerate longer before shaping.
- Decorations can be customized to preference or seasonal themes.
- Store truffles in the refrigerator and consume within 1 week for optimal freshness.
