Ingredients
Pie Crust
- 1 frozen premade pie crust (thawed)
Filling
- 12 oz. whole milk vanilla Greek yogurt
- 8 oz. lite whipped topping (Cool Whip, thawed)
- 2 cups frozen wild Maine blueberries (280g)
- 2 Tbsp blueberry preserves or jam (40g)
Topping
- 1/2 cup frozen or fresh blueberries (70g)
- 1/4 cup blueberry preserves or jam (80g)
Instructions
- Preheat and bake crust: Preheat your oven to 350°F (175°C). Carefully unroll the thawed pie crust and press it evenly into a 9-inch pie dish. Use a fork to poke holes all over the crust to prevent bubbling. Bake the crust for 10-12 minutes until the edges start turning golden brown, then transfer to a wire rack to cool completely.
- Prepare the filling: In a large mixing bowl, combine the whole milk vanilla Greek yogurt with the thawed lite whipped topping, stirring gently until fully blended. Carefully fold in the 2 cups of frozen wild Maine blueberries, keeping them frozen until added to maintain texture.
- Assemble the pie: Spread 2 tablespoons of blueberry preserves evenly over the bottom of the cooled pie crust. Pour the blueberry yogurt mixture over the preserves and smooth the surface evenly with a spatula. Place the pie in the freezer for at least 3 to 4 hours or leave it overnight to set.
- Prepare the topping and serve: Before serving, let the pie sit at room temperature for 30 to 45 minutes to soften slightly. Mix the 1/2 cup blueberries with 1/4 cup blueberry preserves in a small bowl, then spread this mixture over the top of the pie. Slice and enjoy your refreshing Wild Blueberry Yogurt Pie.
Notes
- For best texture, keep the blueberries frozen until just before folding into the yogurt mixture.
- You can substitute fresh blueberries if preferred, but frozen wild blueberries provide the best flavor and texture.
- Letting the pie sit at room temperature before serving helps it soften for easier slicing and a creamier mouthfeel.
- If unavailable, any vanilla-flavored Greek yogurt works, but whole milk variety adds creaminess.
- This pie can be made a day ahead and stored in the freezer for convenience.
