Ingredients

Sauté Base

  • 1 teaspoon sesame oil

  • 1 cup shiitake mushrooms (diced small or quartered, discard stems)
  • 1/2 cup shredded carrots
  • 3 or 4 green onions (sliced into thin rounds, divided)
  • 3 garlic cloves (finely minced)
  • 2 teaspoons fresh ginger (grated, or 1 teaspoon ground ginger)

Broth & Seasoning

  • 6 cups chicken broth (reduced sodium preferred)
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Additional Ingredients

  • 4 pieces bok choy
  • 12 ounces mini frozen chicken wontons
  • Fresh cilantro or other fresh herbs (optional for garnishing)


Instructions

  1. Sauté Veggies: In a large Dutch oven or high-sided pot, heat sesame oil and olive oil (if using) over medium-high heat. Add shiitake mushrooms, shredded carrots, about two-thirds of the sliced green onions (both white and green parts), minced garlic, and grated ginger. Sauté for approximately 4 minutes until the mushrooms and carrots soften, stirring frequently to ensure even cooking.
  2. Boil Broth: Pour in the chicken broth along with low-sodium soy sauce, honey, salt, and black pepper. Stir to combine and bring the mixture to a rolling boil over high heat.
  3. Simmer Bok Choy: Once boiling, add the bok choy to the pot. Allow it to simmer gently in the broth for 3 to 5 minutes until wilted and tender but still vibrant.
  4. Cook Wontons: Add the frozen mini chicken wontons directly into the simmering soup without thawing completely. Simmer for about 3 minutes or until the wontons float to the surface, indicating they are cooked through.
  5. Season Soup: Taste your soup and adjust seasoning as necessary. You can add extra salt, black pepper, red pepper flakes, or chili garlic sauce to introduce more spice if desired.
  6. Garnish and Serve: Remove the pot from heat. Garnish the soup with the remaining one-third of sliced green onions and optional fresh cilantro or herbs. Serve immediately while hot for a delicious and warming meal.
