Broth & Seasoning
- 6 cups chicken broth (reduced sodium preferred)
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
Additional Ingredients
- 4 pieces bok choy
- 12 ounces mini frozen chicken wontons
- Fresh cilantro or other fresh herbs (optional for garnishing)
Instructions
- Sauté Veggies: In a large Dutch oven or high-sided pot, heat sesame oil and olive oil (if using) over medium-high heat. Add shiitake mushrooms, shredded carrots, about two-thirds of the sliced green onions (both white and green parts), minced garlic, and grated ginger. Sauté for approximately 4 minutes until the mushrooms and carrots soften, stirring frequently to ensure even cooking.
- Boil Broth: Pour in the chicken broth along with low-sodium soy sauce, honey, salt, and black pepper. Stir to combine and bring the mixture to a rolling boil over high heat.
- Simmer Bok Choy: Once boiling, add the bok choy to the pot. Allow it to simmer gently in the broth for 3 to 5 minutes until wilted and tender but still vibrant.
- Cook Wontons: Add the frozen mini chicken wontons directly into the simmering soup without thawing completely. Simmer for about 3 minutes or until the wontons float to the surface, indicating they are cooked through.
- Season Soup: Taste your soup and adjust seasoning as necessary. You can add extra salt, black pepper, red pepper flakes, or chili garlic sauce to introduce more spice if desired.
- Garnish and Serve: Remove the pot from heat. Garnish the soup with the remaining one-third of sliced green onions and optional fresh cilantro or herbs. Serve immediately while hot for a delicious and warming meal.
