Ingredients
For the Chicken Skewers
- 2 lbs boneless skinless chicken thighs
- 1 Tbsp olive oil
- 1 tsp salt
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp black pepper
For the Bang Bang Sauce
- 1 cup mayonnaise
- 1/4 cup sweet chili sauce
- 2 1/2 tsp sriracha
- 2 tsp lime juice
For Garnish
- 1/4 cup green onion, sliced
Instructions
- Prepare the Bang Bang Sauce: In a medium bowl, combine the mayonnaise, sweet chili sauce, sriracha, and lime juice. Stir until smooth and well blended. Set aside or cover and refrigerate if using later.
- Cut and Season the Chicken: Cut the chicken thighs into roughly 1-inch cubes and place them into a large mixing bowl. Add olive oil, salt, paprika, garlic powder, and black pepper. Mix well until all pieces are evenly coated. For enhanced flavor, marinate the chicken for 1-2 hours before cooking.
- Soak the Skewers: Soak wooden skewers in water for 10-15 minutes to prevent burning during grilling.
- Assemble the Skewers: Thread the seasoned chicken pieces onto the soaked skewers, spacing them evenly but close enough to cook uniformly. Leave some space at the end of each skewer for easy handling.
- Preheat and Oil the Grill: Heat your grill to medium-high heat and lightly oil the grates to prevent sticking.
- Grill the Skewers – First Side: Place the skewers on the hot grill and cook for about 4-5 minutes.
- Grill the Skewers – Second Side: Flip the skewers and grill for another 4-5 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and shows nice char marks.
- Apply Bang Bang Sauce: During the last minute of grilling, brush a generous layer of the Bang Bang sauce onto the chicken skewers. Let it sizzle and slightly caramelize, then remove from the grill.
- Serve: Transfer the skewers to a serving platter. Drizzle with extra Bang Bang sauce if desired, and garnish with sliced green onions. Serve hot and enjoy!
Notes
- Marinating the chicken for 1-2 hours enhances flavor and tenderness.
- Soaking wooden skewers prevents them from burning on the grill.
- Use an instant-read thermometer to ensure chicken is properly cooked to 165°F (75°C).
- The Bang Bang sauce can be prepared ahead and refrigerated for up to 2 days.
- For a spicier kick, increase the amount of sriracha in the sauce.
