Ingredients

For the Chicken Skewers

  • 2 lbs boneless skinless chicken thighs

For the Bang Bang Sauce

  • 1 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 1/2 tsp sriracha

Instructions

  1. Prepare the Bang Bang Sauce: In a medium bowl, combine the mayonnaise, sweet chili sauce, sriracha, and lime juice. Stir until smooth and well blended. Set aside or cover and refrigerate if using later.
  2. Cut and Season the Chicken: Cut the chicken thighs into roughly 1-inch cubes and place them into a large mixing bowl. Add olive oil, salt, paprika, garlic powder, and black pepper. Mix well until all pieces are evenly coated. For enhanced flavor, marinate the chicken for 1-2 hours before cooking.
  3. Soak the Skewers: Soak wooden skewers in water for 10-15 minutes to prevent burning during grilling.
  4. Assemble the Skewers: Thread the seasoned chicken pieces onto the soaked skewers, spacing them evenly but close enough to cook uniformly. Leave some space at the end of each skewer for easy handling.
  5. Preheat and Oil the Grill: Heat your grill to medium-high heat and lightly oil the grates to prevent sticking.
  6. Grill the Skewers – First Side: Place the skewers on the hot grill and cook for about 4-5 minutes.
